Working with the Berton Family Vineyards in Yenda (on the “left” side of the Great Dividing Range), these fertile soils and warm conditions with cool nights are perfect conditions for growing grapes. The Berton Family, originally from Northern Italy, migrated to Australia in the 1930’s and established their roots in the Riverina area, with these particular vineyards planted in 1996. Picked in late February, the Shiraz grapes are rotary fermented (a process of rotating skins and juice whilst fermenting to fully extract flavors & colors in a short period of time and hence reducing the impact of harsh tannins). After a gentle bag press, the juice is then blended with a small amount of Barbera grapes for extra richness and tannin, then turned to 1 year old American oak barrels for 6 months to impart subtle oak characters. After racking and gentle filtering, the wine is bottled. This Shiraz is an exciting full flavored Shiraz showing hints of spicy white pepper and ripe plum over smoky oak. The rich generous fruit palate has soft, ripe tannins well balanced with oak and a long lingering fruit finish. Perfect with rich red meat dishes, your favorite pasta or simply anytime. This wine has been made to drink now but will cellar for 2 years. Serve cool at 55 degrees for maximum enjoyment.
